          My grandma and my mom made 7 minute frosting by boiling the water and sugar together, then beating the egg whites while streaming the hot syrup into them and beating for a total of 7 minutes. It's a lot like an Italian merengue..

            When I was a teenager I found an amazingly lovely frosting called “Mountain Frosting” it had sugar water (heated to candy temp) and then folded into some Stiff (peaking) egg whites.
            This frosting reminds me of the nougat in a snickers bar or a pecan nougat roll they sell at Christmas in Maryland.

                      To get egg separators like this suction one to work (w/o breaking the yolk) separate while cold and then allow the two components to warm to room temp. Also, hold the device straight up & down: Don't tilt slightly.
                      Also - in the Sponge Cake recipe above this one, the oven temp is 'Quiet'. Does the book detail anywhere what that can be?

                                      2:05 your spirit guides are trying to get a message across to you...never ignore the signs and symbols, they can be anywhere and everywhere. From songs randomly popping up in your head to messages on billboards license plates, it written in graffiti would have you songs playing on the radio into the mall when you walk in there somebody humming a tune that reminds you of the song that you start listening to in your head it's all very important information.
                                      *** 2:50 and I don't know if anybody else picks up on this but you can very clearly because the volume up here something in the background while you're shuffling sounded like someone said you or you or to something was quite loud I would look into that...

                                            My grandmother made 7 minute frosting for her oatmeal cake she made that was taught by HER mother. It uses hot...NEARLY boiling water but the trick is to put it in where it doesn't separate or muck up your icing. I can send my grandma's recipe if you want.

                                                My mom used to make '7 minutes frosting' and it was not grainy. She used the recipe from the early 50s Betty Crocker cookbook she got when she married dad.

                                                    The sugar will recrystallize if you let the water in the double boiler touch the bowl or if you get the mixture too hot. Otherwise this frosting is normally a silky smooth frosting with no graininess at all.

                                                        To get rid of the grainy texture you can add just enough boiling water to the sugar and dissolve it down before adding to the egg white mixture.

                                                            I've never had a cold water cake. But I've had a war cake before which was invented during ww1 I believe, the recipe like this one calls for water, but no eggs... it's made up of rations people would of had available to them during ww1. So raisins, brown sugar, oil, cloves, water, flour... the cake itself isnt very good but I imagine it being a huge hit at the dinner table while german zeppelin's are bombing your city

                                                                        My mom made 7 minute frosting a lot. It's my favorite to make as well. She never used a double boiler, just fully dissolved the sugar in a saucepan with the water and the cream of tartar. Like a simple syrup, no graininess at all. Pour it very slowly into a mixing bowl with the egg whites as they are beating. I use a stand mixer, so much easier, and beat until STIFF peaks. We always add vanilla. Tastes like creamy marshmallows. Occasionally we top with coconut or toasted coconut. It's always so pretty and tasty.
                                                                        Once I didn't beat it enough, and it separated later on my cake, not fun. 🙄 Live and learn! 🏃‍♀️

                                                                                                I am quite sure that jam or marmalade (or however you call smashed/pureed fruit boiled with sugar) will do good service to this cake recipe. :)

                                                                                                  That is a basic Swiss Meringue. The correct technique requires to add the sugar little by little to allow it to dissolve.
