Will it Freeze Dry? - COCONUT CREAM PIE - in a Harvest Right home Freeze Dryer

- We freeze dried a Coconut Cream Pie from Shari's Cafe & Pies.
We froze the pie overnight, and then quartered it before cutting it into 1/2" thick slices for the freeze dryer. It was very hard to cut, but by the time I got to the last quarter it softened up and was much easier to cut. I would recommend letting it thaw for 1/2 hour before you try to slice it.
We ran it through a standard freeze dry cycle and it turned out great! The main pie section was very crunchy just like when you freeze dry ice cream. The topping was delicate and was so good we may do a whole batch of just whipped cream!
One thing to note is that the topping wants to break away from the main pie filling, so be sure to have a plate ready to catch the broken goodness.
