      Ugh... This is a prime example of why I hate 'traditional' butchers/cooks.
      "There's one way to cook a steak."
      "Grills lines are diamonds, yes or no."
      "We do the old way, the right way."

      Hundreds of years of experimentation and research, by chefs and scientists/chemists/biologists alike, have proven you're WRONG!!! Different people like different things cooked different ways, there is no 'right way.'
      Anyone ever gave me a rare steak I'd tell 'em to take it back and finished cooking the damn thing. And no, I don't like shoe-leather; Contrary to popular belief, you can cook a steak well done without removing any of the moisture or flavor.

                              favorite: NY Strip Medium Rare but closer to rare than medium
                              Least liked: Fillet because it has so little flavor and I want to taste meat not added seasoning
                              Most Overrated: Ribeye because it has way too much fat and gristle and does not taste enough better than strip to be worth cutting out all the parts I will not eat.

                                                  Why did James put olive oil on his steak, then act like he didn't know why there was so much smoke?. Everyone knows you dry your meat if you want it to brown, ( get grill marks)... Jaime looks like the chef in this battle!!!

                                                                          oh no way too pink. i get sick if i eat steak cooked like those ones. i prefer nice dar or burnt as some would say , on the outside and brown in the middle. or as my family calls it i like my steak nailed to a tree in a bushfire.                                                                                         So can anybody explain to me what is so important about diamond grill marks that the expert says if they aren't there that is a game over? I may just be ignorant, but isn't that just an aesthetic? To me, either way, a steak is a steak and I just want it to taste good!

                                                                                              Some people remain adamant that you Never oil a steak, just the grill. These are also the people that ruin a steak by letting the meat burn onto the grill. I took grief for years seasoning and then oiling the steak-Then putting it on the grill.
