Rick Makes Pork Tamales | From the Test Kitchen | Bon Appétit

  • Join Rick Martinez in the Bon Appétit Test Kitchen as he makes pork tamales. You can make masa, a dough made from ground corn, in two ways: instant and fresh. Fresh yielded the best corn flavor and best texture, but you can use corn masa flour too, which is easier to find. You can find fresh masa and dried corn husks at tortilla stores/factories, international sections at larger stores, or online. Whichever masa you choose, be sure to save some of the chile purée from the pork filling.

        I also really love Rick's explanations to how it's traditionally prepared, where he deviates and why. I personally prefer trying to cook new dishes as authentic as possible, but when I clearly see the difference and why that might be good to just incorporate I think that's really great.

            Tamales are the one Latin food that I just don't get. Tried dozens of authentic ones that people swore up and down were the greatest. I think it's the texture of the masa part, which fits pretty well with my dislike of most steamed foods that aren't veggies.

                  I did a tamales cooking class in Mexico and it was completely different. I'm guessing it's a regional thing, since we were in the Yucatan peninsula (Cancun). The dough was much thicker and cooked in banana leaves. They came out more like Hot Pockets, sealed on all sides, and very sturdy to eat with one hand.

                                            Adding salt and adobo to the masa is 100% how we do it in northern mexico because we figured out how to make them tastier than in México city.

                                                      Rick, I did like your video because I thought it was kind of funny, especially the intro. However, what I didn't like is the fact that you were wearing nail polish while mixing the masa with your bare hands. I mean you look pretty and everything but according to USDA FSIS, basics for handling food safely, people who handle food are no longer allowed to wear fingernail polish or artificial fingernails as they pose a contamination hazard for the food, unless they wear gloves to prevent the contamination hazard. To avoid chemical contamination, the food code requires that no cooking vessels may contain toxic metals. In addition to that nail polish in your fingers is prohibited because nail care products contain, in varying amounts, many toxic and potentially hazardous ingredients. ... Formaldehyde, a known carcinogen, is used as a nail-hardening agent and disinfectant for nail care tools. Exposure to dibutyl phthalate, added to polishes to provide flexibility, has been linked to reproductive problems. Please don't mind me, I am just sharing some safe steps in food handling. Spending time in your kitchen should be enjoyable, but let's try our best to avoid cross-contamination. As a chef, the health of others is our responsibility. Best Wishes!

                                                                          Batch two, much better than the first, and better than I can buy at the local restaurant here in Dallas. Big difference was following the recipe for the dry Masa available to us, and being more gentile shredding the pork. Never would have tried it without Rick!

I just took the pork out of the oven and shredded it and gave it a little taste. OH. MY. GAWD! It is SO freakin' good! These are going to be some amazing tamales!

                                                                                                  Update: They were the best tamales I've ever had! I'm in bed now, a bit early, because I'm so full. Make these tamales. For real! I will admit that mine came out a bit...ugly, but that was entirely my fault. Still super happy! Goodnight :3
