                Funny I was always warned never to salt the water when boiling pulses as it hardens the outer shell. You add the salt after the peas are cooked.

                                I had this same exact dish but with mutton rather than beef, at a friend's house once. Good god, it was one of the best things I've ever consumed. Had no idea that it's actually a Persian dish.

                                    Just made this. Used about half a lime plus a sprinkle of Tajin. Seems a bit TOO TART but of course I don't know what it's SUPPOSED to taste like. Any ideas how to cut the tartness?

                                                                              @ba, please do simple things to be more environmentally friendly. Like here, Andy could have used a cloth towel to wipe his hands after rinsing his potatoes, instead of a paper towel
