Carla Makes an Apple Tart | From the Test Kitchen | Bon Appétit

  • Join Carla in the Test Kitchen as she makes an apple tart! This unadorned tart bakes at a fairly high temperature and boasts a deeply browned crisp crust. The apples at the bottom of the tart are insulated from direct heat, so they steam and soften into a very tender layer. The ones up top hold their shape, which means you’ll get a mix of textures in each bite.

                I made the crust and used it for a galette this past Thanksgiving. I'm not gonna lie, I was scared after I added the water and it was VERY dry...and it was still pretty dry after sitting over night. Then magically, after I took it out of the fridge and let it sit at room temp for a few minutes before rolling, it became this beautiful silky dough. Then of course I baked it up and it was this flaky heaven that stayed flaky all day, then the leftovers stayed flaky after being in the fridge and then heated up in the microwave. Moral of my story: never doubt Carla.

                  ….when you can just use a potato masher
                  flour, salt, ice cold butter
                  mash. period. done. +water
                  -my pie trick, also cut not crush your cookies, again, easy, seconds, no talent

                    Oh no to the apples with skin on. NOOOOOOOooooooooo. I had a roommate that left the skins on in an apple pie and the texture made me gag. There shouldn't be hard bits in pie. I"m assuming tarts would do the same. Also isn't browned butter, burnt butter?

                                  That's a really american way to eat tarte aux pommes, with crème fraîche ? In France that would be super weird ! Crème fraîche here is mostly used for cooking not to be consumed "raw" :o

                                        I tried this recipe today and the dough making process was such a mess for me, i just wanted to cry. And the apples on the top were burnt after the first 25 minutes of baking.. I had to decrease the oven for it to cook more on the bottom. At the end it wasn’t what I imagined but i can’t complain because I think I might try again to be better at it. Anyway, I love you Carla and your recipes are the best to make, and also you give me hope. Love your book btw! Much love

                                          This I the only time that I ever saw a pastry dough and thought 'i can do that', and so I did. Thank you so much Carla!

                                          (note: went surprisingly well! although i may have worked the pastry too hard, it came out not so flaky, but super cruchy. Not sweet at all, i would appreciate a bit more sugar, maybe on the filling, get some compote in there? OR go more salty and make something with maybe mushrooms, herbs, cheese, tomatoes...?)

                                            Why play with the dough so much? Just melt the butter, let it cool, then add to mix. The entire dough needs to mix with the butter, not just random spots.

                                                        It is funny that I love Carla and Claire for the opposite reasons. I love how much Claire is incredibly nerdy about cooking and therefore gets all stressed out about things coming out perfect and Carla, while being as professional as Claire, always has a chilled out vibe around her that makes you feel that even when things may get difficult (like with the elaboration of cheese on the pizza vids), she'll figure it out and things will be OK.

                                                        Everytmie they use apples they use pink lady apples. In this video Carla says they're accessible everywhere, yet, I have NEVER seen one in a store! And I have LOOKED! Is this a Florida problem?

                                                                Ok that is an interesting way to roll a pie dough which I appreciate but the only thing that I don’t appreciate is that ring that she’s wearing......EEww, rings carry bacteria under them, please please remove your rings, & bracelets, when you work with food, people should be aware of food safety.

                                                                                  While Carla’s rustic crust looks AMAZING, I use this recipe for the filling of the cinnamon roll apple pie that I got from Tasty. It’s the best of both worlds. If the two channels were to ever collaborate, that would need to be it.
