Sohla Makes Red Lentil Zucchini Fritters | From the Test Kitchen | Bon Appétit

  • Join Sohla El-Waylly in the Bon Appétit Test Kitchen as she makes red lentil zucchini. These crispy, crackly zucchini fritters take inspiration from the traditional Bengali onion snacks piyaju. Soaked and blended red lentils make up the batter, which is spiked with turmeric and chili powder.

          I tried this and they didn't stick together at all. Think maybe I didn't soak or blend the lentils enough. Just ended up with delicious courgette and lentil rubble.

                        So I just made these, and these are absolutely MARVELOUS. Sohla, I love you, this recipe is amazing. It's perfectly balanced, the bitterness of the zucchini with the freshness of the sauce and the parsley, the softness of the zucchini and the onion with the crunchiness. I just added a little of tomato paste and swapped some of the spices for garlic, Raz El Hanout and a barbecue spice mix to please my European palate a little more
