        You wouldn't change the time to make your steak more well done. If it's never going to increase in temperature then it's never going to cook further than your temperature is set. To get it more well done you'd increase the temperature.

              I have that vacuum sealer. The roll of bags fits inside, the gray grip you see has a cutter. Just slide it across the bag. Much easier.

                                                                      “Pro Tip: Vary time Based on how well done you want...” This is the opposite of a pro tip. Whoever added the tips doesn’t know anything about sous vide. Time in the water bath will change texture, not temp done-ness.
