    The content is great, but the editing is meant for an audience on Ritalin. I would love if they Bon Appetit stopped the constant cuts, harsh stops and odd commentary. The content is good. You don’t need to be “quirky”

        Not deveining the shrimp is gross. So much cross contamination throughout this whole video. No self respecting chef would put this online knowing people could make themselves extremely sick if they did this.

                                                                So it was not stated whether the three meats wss aged uncovered in a fridge for the 3 days.......That would be my assumption. But I don't have a commercial kitchen, looked like an oven? What temperature would be an impt detail to ad.

                                                                                              I still don't understand how he left seafood and chicken out at room temperature for 3 days and it's still OK to eat, the USDA says to throw raw food away if it sits at room temperature for more than 2 hours.
