  • Rarely does food play such a central character in a TV show or movie that's not specifically about food, but in The Sopranos, it might as well be one of the family. The crown jewel of which, despite Artie Bucco's hapless attempts, is the cuisine of Carmela Soprano. Strap on your gold President and build a ramp for the ducks, because it's time to emotionally repress our murderous mentality with some cheesy, saucy pasta - with a layer of basil underneath the cheese, of course.

                Anytime I make homemade lasagna I typically use the egg roll wrappers you can get out of a grocery store. And I will normally make a bechamel and add it to my meat sauce. Turns out delicious every time.

                                          Bechamel is traditional for Lasagna in most italian region. Only a few use Ricotta instead.

                                                              Most non Italians/Sicilians don’t realize that we rarely if ever eat Parmesan with our pasta and gravy. We use a grated pecorino Romano that we refer to as Locatelli cheese because Locatelli is the best brand from Italy that you get around here (NE United States/ New Jersey) . Parmesan is used more on specific other pasta dishes most familiar to most probably Alfredo sauce which is basically cream and Parmesan on pasta anyway...babish just made what I would refer to as “americani ziti” ( pronounced “medi-can zee-tee”) a “medican” is exactly what it’s proper spelling looks like it’s the Italian word for American as a reference to an Italian American who has lost their culture and roots and is now a medican. This ziti is straight medican ziti.

                                                                                        Not really. It's a thing of taste and preference, it's more of an acquired taste than something like cottage cheese, but personally I really enjoy it. Its likely not used as much because its grown a reputation by people inexperienced with the cheese for being too bitter, firm, and less spreadable than your other typical cheeses for lasagna.
