    Paella (Valencian and Spanish: is a Valencian rice dish that originated in its modern form in the mid-19th century near lake Albufera, a lagoon in Valencia, on the east coast of Spain.Many non-Spaniards view paella as Spain's national dish, but most Spaniards consider it to be a regional Valencian dish. Valencians, in turn, regard paella as one of their identifying symbols.
    There are three widely known types of paella: Valencian paella (Spanish: paella valenciana), seafood paella (Spanish: paella de marisco) and mixed paella (Spanish: paella mixta), but there are many others as well. Valencian paella consists of white rice, green vegetables, meat (rabbit, chicken, duck), land snails, beans and seasoning. Seafood paella replaces meat and snails with seafood and omits beans and green vegetables. Mixed paella is a free-style combination of meat, seafood, vegetables, and sometimes beans. Most paella chefs use calasparra or bomba rices for this dish. Other key ingredients include saffron and olive oil.

                                                  Two things which are "big mistakes" for anyone knowing how paella (pronounced "paeiia" and not paiella) : First you put the squid and the water you add must be hot (the second water was streight from the tap). A waste of the seafood overcooked :(

                                                            Paella can be made a lot of ways with a lot of different ingredients. There is no "standard" paella. They all contain rice, long or short, liquid, and saffron (mostly). I've eaten a dozen versions.

                                                                              I'm sure the taste is amazing with all the seafood , but the seafood must be overcooked, the squid rubbery. I use a good dousing of vermouth or cooking wine to start my rice, similar to risotto, and I infuse saffron into homemade chicken stock, use arborio or another short grain rice and add seafood towards the end. Never stir once the rice is cooking so that lovely crust forms on the bottom of the pan. I guess there's more than one way to skin a cat ;-)

                                                                                        Holy shit what kind of maniac cooks shrimp for 20 min they must taste like a car tire being cooked for that long. You only add them after the rice has cooked for a while. And you use short grain rice not long grain. And what the hell happened to the chicken, did the dog eat it?

                                                                                                  why put the rice in last? and such big amounts of meats/fish? altogether it is too big and lumpy. he used saffron which is good; but then only pepper? if i try this i will put in much less and some things not at all.
